AMAZING INDUSTRIAL USES OF CASSAVA Cassava is a dicotyledonoue plant belonging to the family of euphorblaceae.it is also known as manioc,tapioca,or yuca.The botanical name for cassava is manihotesculenia. The cassava plant is a perennial shrubs that may be up to 4m high.A mature cassava plant has two kinds of roots.The fibrous ones which continue to absorb water and minerals actively from the soil and the tuberous ones which store food material. In West Africa a large number of cassava varieties exist. Recommended varieties for Nigeria climate are CH50,53101, 55124 and Ch419. The cassava tuber consists of about 15% peel and 85% of flesh. Tge flesh which is the edible portion has the following approximate composition Water 62%,carboh carbohy which is mostly starch you s 35%, protein 1.2%, fat 0.3%, minerals 1%.
